Porchetta with Wild Garlic & Thyme (3kg)

Cut from the centre of the animal, our Porchetta with Wild Garlic and Thyme is made with rolled pork loin and belly to create a European classic. With fragrant wild garlic spiralling within the pork as it slowly roasts, the richly flavoured sausage meat carries a delicate aromatic flavour through the whole joint. Make the most of your porchetta by shaving it thinly and serving as a roast dinner with vegetables, or with salad for a lighter dish. All our pork is free-range, sourced by British independent farmers that provide the highest welfare standards. Pigs are raised in green pasture and are free to roam outside and wallow in the mud throughout their whole lives. Allowing the pigs to grow slowly in a natural environment not only protects the welfare of our pigs, it also means exceptional tasting pork. Cooking Instructions: Crackin’ Tip – For the crackliest crackling we recommend placing the joint in on a wire rack in your sink and pouring 2 kettles worth of hot water over the fat. Once cooled rub with our Dorset Sea Salt Co. Salt. 1. Remove the joint from its packaging and pat dry. Bring to room temperature by leaving out of the fridge for at least 30 minutes. 2. Preheat your oven to 180°C/160°C fan/gas mark 4. 3. Place the pork joint on a wire rack in an oven tray, and roast in the middle of the oven (fat side up) for 2 hours. (do not remove the butcher string) 4. increase your oven temperature to 230°C/210°C fan/gas mark 8 and roast for a further 25-30 minutes. 5. Remove the joint from the tray and place onto a carving board. 6. Rest is best – allow to rest uncovered for at least 20 minutes. Ovens, grills and hobs are all variable.
