The Westcombe Red is Somerset’s take on the Red Leicester and is produced from rich unpasteurised milk. It’s a mellow semi-hard cheese that’s benefitted from around five months of maturation in traditional cloth-bound ten kilo wheels. This artisan red cheese boasts a depth of flavour with hints of roasted nuts. Westcombe Dairy is a small artisan dairy in East Somerset which makes traditional Cheddar and other West Country cheeses using unpasteurised milk.
