These escalopes are boneless pieces of veal that have been flattened and thinned out using a mallet. This traditional method breaks down the fibres in the meat ensuring that it is very delicate, whilst providing you with a thinner cut that cooks really quickly.
If you've never had veal before, it's quite pale in colour with the subtle flavour of mild beef (it's actually lower in fat too) and once cooked, is really tender. With these escalopes, we love to make homemade schnitzels by dusting them with flour before dunking them in egg and then pressing them in some breadcrumbs. Delicious!
All of our veal comes from 100% grass-fed cattle born and reared for their whole lives on West Country farms.
