This wild rabbit has been portioned into the saddle, shoulder and legs so a lot of the preparation has been done for you. This wild meat is incredibly lean with a deliciously subtle and sweet gamey flavour. If you've never tried it before, it tastes like a strong version of chicken and is just as versatile too. We love to roast or bake it in a pie, or braise in a stew or winter casserole to keep the meat tender and moist.
Just a quick note for you, the leg meat is very lean, so make sure you take care to prevent it from drying out during cooking. Marinating or barding (covering in a fat or wrapping in bacon) can help moisten the meat whilst cooking.
All of our wild game is free-range and comes from the Mells Estate owned by Lord Oxford, as well as Barrow Farm Shoot, which is regarded as one of the best partridge shoots in the country, and Castlemead in Somerset.
