Beef shin is a fairly lean cut that is a great alternative to chuck and really good for slow cooking for that melt in the mouth sensation. We think it's the best cut to use when making a hearty stew as the connective tissue melts during cooking, adding extra flavour and a warming richness to the dish.
As with all our beef, our shin is 100% grass-fed and dry-aged on the bone for a minimum of 28 days, so is incredibly tender and full of intense flavour.
