Lamb and Carrot Stew

Lamb & Carrot Stew
Preparation time: 20 minutes

Cooking time: 2 hours and 30 minutes

Ingredients (serves 5)
2 White Onions
3 carrots
2 TBSP of coconut oil or olive oil
1 tbsp of cumin
400g of field&flower stewing lamb
400ml field&flower chicken stock
1 400g tin of chopped tomatoes
Sea salt and freshly ground black pepper
Fresh coriander to serve

Method
1.Preheat oven to 180ºC. Peel your onions and roughly chop them up. Cut your carrots into small chunks.
2.Place oil in a large stewing pot and add in your cumin and a pinch of salt. Throw the veggies after a few minutes.
3.Add in your meat and allow to brown for a minute then poor in the stock and tomatoes.
4.Add another pinch of slat and some ground black pepper.
5.Bring the temperature to a slightly simmer and cook for -2.5 hours.
6.The meat should be very soft. Sprinkle with some fresh coriander.
