This cut has been boned and butterflied by our expert butchery team before being marinated in thyme and garlic, salt and pepper and a splash of olive oil for 48 hours. We can't tell you just how delicious it is; the marinade really does increase the tenderness of the meat and intensify it's flavours, and when roasted (or BBQ'd) the fat disappears through leaving an easy to carve joint that really will melt in your mouth.
All of our lamb is free-range and grass-fed from the West Country. Animal welfare is at the top of our agenda. We use no sprays or fertilizers on our fields which means that we naturally stock our sheep in very low densities (about 4-5 ewes per acre) so not only can they enjoy a chemical-free natural diet, but also have plenty of space to graze free.
