The tenderloin is the most lean and tender pork cut available. It's really easy to cook, just score the top of the meat and sear in a pre-heated oven at 220C, before lowering the temperature and letting it cook through for a further 15 minutes. As it's so lean, be careful to not let it cook any longer than this because it can otherwise dry out.
