This traditional breed joint comes either boned and rolled or with the bone in. It is naturally very lean and makes for a beautiful tasting roast dinner when accompanied with a bundle of seasonal veg and thick Somerset ale gravy. The crackling is delicious too - just score the fat with a sharp knife and rub in plenty of salt, olive oil and a squeeze of lemon juice before cooking.
