Our partridge is sourced from our local surrounding woodlands in the West Country and we're really excited to have it back in season; from now until February (it just so happens to be James Mansfield's favourite game too!).
Partridge is fantastic for maintaining a healthy lifestyle; it's a very lean meat and an excellent source of protein and iron, in fact it typically contains about three times the amount of beef. It also provides a subtle introduction to those who may be unfamiliar with game thanks to its mellow and delicate flavour.
We recommend that for these breasts you either pan-fry or grill them until the meat is brown all over. They're sold in packs of four, and as partridge is a fairly small bird, we suggest one breast per person for a starter or two for a main course serving.
All of our wild game is free-range and comes from the Mells Estate owned by Lord Oxford, as well as Barrow Farm Shoot, which is regarded as one of the best partridge shoots in the country, and Castlemead in Somerset.
