Oxtail is a wonderful tasting cut when braised in a stew or casserole as the slow cooking helps to really breakdown the muscle fibres and release its deep and intensified flavours.
We deliver it with the bone in and to really get the most out of it we recommend chopping into 4cm chunks, drizzling over some olive oil and browning the pieces in the oven at 220C for 20 minutes. All you need to then do is add the rest of your stock, soup or stew ingredients and roast for up to five hours on a much lower temperature, about 170C.
As with all our beef, these burgers are 100% grass-fed and dry-aged on the bone for a minimum of 28 days before being made, so are incredibly tender and full of intense flavour.
