The name Osso Bucco is Italian and translated literally means 'bone with a hole' playing reference to the marrow hole that is at the top centre of these shank cuts. If you've never had veal before, it's quite pale in colour with the subtle flavour of mild beef (it's actually lower in fat too) and once cooked, is really tender.
All of our veal comes from 100% grass-fed cattle born and reared for their whole lives on West Country farms.
