It might be smaller than its other roasting counterparts, but the lamb rump is a great joint of meat with a wonderful rich flavour due to its generous fat content. Don’t let this put you off! It makes for a beautifully tender and flavoursome feast.
Preheat the oven to Gas mark 4, 350˚F, 180˚C, 160˚C fan.
Remove plastic outer film. Bake in foil tray.
For pink roast for 20 minutes, for medium roast for 25 minutes, for well done roast for 30 minutes.
Serve with butter and sea salt crushed new potatoes, minted peas and the juices from the pan.
