We hang our gammon whole after dry-curing it in our very own homemade cure which allows the salts to dry out the meat resulting in the most deliciously sweet and tender steaks.
All of our pork is completely free-range and comes from farmer James Mitchell at Orchard Farm in Somerset. We work with James because he truly produces the most exceptional pork. All of his pigs are completely free-range, raised to the absolute highest animal welfare standards, having fun rooting around in the Somerset countryside and enjoying a delicious natural diet for their entire lives.
